Works Harder, Stays Sharper

Holds a razor edge through heavy prep.

At 58±2 HRC, ACUTO440 has incredible edge retention without brittleness. That means you can put off sharpening it for longer.

Questions?

What are Misen’s ACUTO440 Knives made of?

Our ACUTO440 Knives are made with AICHI ACUTO440, an exceptionally corrosion-resistant Japanese high-carbon stainless steel. AICHI ACUTO440 is rust-proof, incredibly durable, and has excellent edge retention. What that means for you: less time cleaning and sharpening, more cooking.

What’s the difference between Misen’s ACUTO440 Knives and classic knives?

All of our knives are made from high-carbon stainless steel, which is what gives them their razor-sharpness and excellent edge retention. However, our ACUTO440 Knives have a much higher chromium content (about 18%), which makes them significantly more corrosion (aka rust) resistant.

Our ACUTO440 Knives also feature a rounded spine and heel (the back of the knife where the blade meets the bolster), creating a more comfortable grip over long prep sessions.

How are Misen’s ACUTO440 Knives different from other high-carbon knives?

We wanted our ACUTO440 Knives to be high-performance tools that you could still leave in the sink overnight if you needed to. That’s why our ACUTO440 Knives are made with AICHI ACUTO440, a Japanese high-carbon stainless steel that is more durable and easier to care for than other high-carbon knives, which are prone to rusting and/or chipping without proper care.

What do you mean by rust-proof?

Our ACUTO440 Knives are made with AICHI ACUTO440 steel, an exceptionally corrosion-resistant Japanese high-carbon stainless steel. Our knives have been lab-certified to withstand up to 100 dishwasher cycles, as well as 50 days of being submerged in water, without showing any signs of rust.

Can I put Misen’s ACUTO440 Knives in the dishwasher?

While our ACUTO440 Knives have been lab-certified to withstand up to 100 dishwasher cycles without showing any signs of rust, we generally recommend hand washing all of your Misen knives. Because our knives are extremely sharp, when they get jostled around in the dishwasher, the blade can cut through the soft materials that make up your dishwasher racks. Dishwashing can also damage your knives if the blade edge bangs against hard objects like flatware or pots and pans during the washing cycle.

How often should I sharpen my knives?

Whenever you start to notice your knife is slicing and dicing a little less crisply than usual, it’s time to sharpen. Although our ACUTO440 Knives can go long periods between sharpenings, we generally recommend getting them sharpened about twice a year for best performance. We also recommend regularly using a honing rod between sharpenings to keep your knife edge in good shape.

My blade has discoloration and/or staining. What is this?

While our ACUTO440 Knives are rust-proof, all high-carbon knives can experience some discoloration and/or staining with prolonged exposure to acidic foods and/or salt. This is purely cosmetic and is not the same as rust.

    Nice Addition

Just what I ordered. They came sharp. My wife cut herself the first use. I think she’ll stop using her palm as a cutting board now.

2-Piece ACUTO440 Knife Set, White

If you want a streamlined everyday setup, this 2-piece ACUTO440 knife set in White is built around the two blades most home cooks rely on most: an 8-inch chef’s knife for primary prep and a 3.3-inch paring knife for in-hand detail work. For a quick look at how it fits within Misen’s broader lineup, browse the knife sets range, or compare it against individual styles in the kitchen knives collection.

What makes the 2-piece set so easy to live with is focus. An 8-inch chef’s knife handles most board work, from chopping to slicing, while the smaller paring knife is suited to trimming and quick detail tasks where a full-size blade feels oversized. If you already have kitchen shears or a bread knife you like, this set can be a clean, no-duplicates foundation. If you routinely slice crusty loaves or reach for a sawing motion on tomatoes, stepping up to the 3-piece option adds a serrated knife without changing the core chef and paring pairing.

Across these sets, the shared baseline is AICHI ACUTO440 steel, positioned for pro-level sharpness and edge retention, plus rust resistance that was lab-tested to withstand 50 days submerged in water and up to 100 dishwasher cycles. That said, the recommended routine is still straightforward: hand wash, dry immediately after use, and plan to sharpen every 4 to 6 months. For deeper guidance straight from Misen, the ACUTO knives care page walks through upkeep details.

Comfort is another day-to-day difference you notice fast. This set is built with an ergonomic rounded spine designed to support a comfortable pinch grip, the grip style many cooks naturally settle into for control. If multiple people share your kitchen, that rounded spine can make longer prep sessions feel easier, especially when switching between the chef’s knife for bulk prep and the paring knife for smaller, repetitive tasks.

Choose the piece count based on what you actually cut, and how much you want your knife roll or drawer to handle. The 2-piece is the minimalist choice, the 3-piece adds a serrated knife for common foods that fight a straight edge, and the 5-piece and 7-piece sets are geared toward broader coverage (the 7-piece also includes two tools for faster prep and easier cleanup). All are backed by a 60-day test drive, free returns, and a lifetime warranty against defects, so your main decision is how much range you want on day one.

Frequently Asked Questions About ACUTO440 Knife Sets

What knives are included in the 2-piece ACUTO440 set?

The 2-piece set includes an 8-inch chef’s knife and a 3.3-inch paring knife. It is designed to cover most everyday prep tasks, with the chef’s knife handling primary cutting on the board and the paring knife supporting smaller, more precise work.

How rust resistant is ACUTO440 steel?

ACUTO440 steel is described as rust-proof, and Misen notes lab-tested rust resistance that withstood 50 days submerged in water and up to 100 dishwasher cycles. In normal use, that testing is meant to translate into less worry about corrosion compared to many typical kitchen knives.

Should I put these knives in the dishwasher?

Misen’s care guidance recommends hand washing and drying immediately after use. Even though the steel’s rust resistance was tested through dishwasher cycles, hand washing helps protect the edge and overall finish, and it is the simplest way to keep performance consistent over time.

How often do I need to sharpen the knives?

Misen recommends sharpening every 4 to 6 months. The exact schedule depends on how often you cook and what you cut, but using that range as a baseline can help you keep the blades feeling responsive and safe, without waiting until they are fully dull.

Is discoloration on the blade a sign of rust?

Not necessarily. Misen notes that high-carbon knives may show discoloration after exposure to acidic foods and or salt, and that this is purely cosmetic. They distinguish this from rust, which they describe as extremely rare for these knives.
