More Browning. Less Steaming.

Side walls keep juices in without restricting air flow. That means your roast gets brown and crispy, not mushy and steamed.

Why 5-Ply?

5-ply means a pan that performs (and looks good).

Three layers of steel and two of aluminum, bonded at 3.0mm thickness for even heat. No hot spots, no warping.

Questions?

Are stainless steel pans difficult to care for?

Not at all! Throw them in the dishwasher, let them soak overnight, sear on high-heat — our stainless steel cookware can take anything and truly lasts a lifetime.

Will my pans be nonstick?

Stainless Steel is not nonstick, however, there are ways to make the surface temporarily nonstick before each cooking session.
To do this, heat the pan over medium heat for 2 minutes, add 1 teaspoon of vegetable oil and swirl it around the pan. When you see smoke turn off the heat. Let the pan cool down and wipe out any excess oil. Your pan is now temporarily seasoned and should remain nonstick until you wash it with soap!

Is the cookware induction compatible?

Definitely!

How do I clean stains and discoloration off of the pans?

Use Bar Keeper's Friend, (baking soda will also work!), water, and a lightly abrasive sponge.

Doesn’t every company on earth claim their stuff is better?

Yep! That’s why we tend to let our reviews do the talking. At Misen, our goal is to make great products and sell them for fair and honest prices. That’s what value means to us.

    Awesome!!

For sheet pan meals—this is the bomb! Easy to stir without spilling over the sides and cleanup was a breeze. Cooked on tomato sauce and olive oil came clean with Dawn and a bit Bon Ami for the corners. Bought one for each of my daughters. ❤️❤️❤️

    Good quality but small

I purchased this pan to use in my toaster oven. While it was of good quality, it is quite small. I returned it and placed an order for a larger size in the new carbon steel.

I love this pan. Roasted proteins and vegetables are awesome. Deglaze the pan with some wine and stock makes a great sauce.

18‑Inch Stainless Steel Roasting Pan for Big Meals

For big roasts and sheet-pan style cooking, the 18" Stainless Steel Roasting Pan is built to earn its space year-round. Its 5-ply stainless steel construction and 3.0 mm thickness are designed for excellent heat retention and even heating with fewer hot spots, and it is oven safe up to 800 F. If you are deciding between sizes, the options below make it easy to match the pan to how many people you typically cook for.

What makes the 18" size especially useful is how it supports the whole roasting workflow. The 1.5-inch side walls help with airflow for browning while also offering spill protection, and the extra-wide handles are easier to grip securely, even with oven mitts. The pan is also compatible with half-sheet size wire racks and baking mats, which is handy when you want to lift out a roast to rest, keep ingredients elevated, or manage drippings more cleanly.

This roasting pan is designed for high-heat oven performance, and it is warp-resistant, induction compatible, and dishwasher safe. The 5-ply, 3.0 mm build focuses on even heating with fewer hot spots, which matters when you are roasting larger cuts and want consistent browning across the pan. To explore more pieces built around the same stainless steel category, you can browse stainless steel cookware, or see the broader lineup in cookware if you are building out an oven-to-stovetop setup.

Stainless steel also rewards a simple routine: before cooking, preheat the empty pan on medium-high for 3 to 4 minutes, or until a splash of water forms round balls that bounce around the surface. For best results, cook with oil or butter. If you ever get stubborn stains from high-heat roasting, the page recommends applying Bar Keeper’s Friend or baking soda, then rubbing with a soft sponge. That keeps the surface looking its best without needing special tools.

Frequently Asked Questions About Stainless Steel Roasting Pans

How hot can this roasting pan go in the oven?

The 18" Stainless Steel Roasting Pan is oven safe up to 800 F. That high temperature rating gives you flexibility for everything from traditional roasting to finishing steps that call for higher heat, using the same pan.

Can I use the roasting pan on an induction cooktop?

Yes. This roasting pan is induction compatible, so it can be used on induction surfaces in addition to standard oven use. That can be helpful for warming drippings or starting a pan sauce when your cooktop setup allows for it.

Is it dishwasher safe?

It is dishwasher safe, which makes cleanup easier after messy roasts. If you prefer a more hands-on approach for appearance, follow the brand’s stainless guidance for cleaning and stain removal on the stainless care page.

What is the recommended preheat method for stainless steel?

Preheat the empty pan on medium-high for 3 to 4 minutes, or until a splash of water forms round balls that bounce around the surface. Then add oil or butter before cooking. This method is recommended to improve results when cooking on stainless steel.
