Love this pan!
This is the easiest pan to use. I've always struggled with having to properly season pans. I'm not a restaurant chef and I don't cook on the stove every day. When I do, I want the quickest, easiest way to fry without everything sticking. Especially eggs, which tend to stick badly even with oil or any other type of grease. I like to wash my pan and put it away after each use since I am not using it more than one or two days per week. Having the carbon nonstick frying pan has made this process effortless.

Nice Pan
I'm very happy with this pan. I've used it almost daily since I received it. It fits nicely between a smaller ceramic non-stick pan I have, and a larger 12-inch straight sided stainless steel skillet. I prefer stainless steel to the ceramic non-stick (must better searing) and this stainless all-purpose pan is a lot easier to cook with. It's the perfect size for preparing meals for two-four people.

It has been a year - and I still love this pan!
I bought this pan a year ago to transition away from classic nonstick, and have used it almost every day since. I love that you can use metal tools, and it requires slightly less maintenance than carbon steel or cast iron. It is lightweight, and it worked beautifully for the first few months with little to no maintenance. As the patina layer built up, I found that I have had to condition the pan more frequently (described on the Misen site) but it still works very well! I think the main keys to success with this pan are to never cook above medium heat, condition if the pan looks dull, and use either butter or a high smoke point oil. For the eggs cooked in this video, I used about 1/4 tbsp butter and had no issues. I still reach for my stainless steel and cast iron for searing meats and high temp things, but this pan works for just about everything else! I would recommend the “deeper” newer version though, which I think is a great improvement.
